Caviar Maxim's is expanding its range with the introduction of Polyodon caviar. Produced from Polyodon spathula, a fish historically native to Mississippi in North America, these new fish roe are part of an approach based on diversification and excellence.

An excellent alternative to Baeri and Osciètre caviars

Its eggs are slightly smaller and finer than those of sturgeon caviar, giving it a delicate, elegant texture on the palate. Its flavour is subtle, less salty and milder, making it an excellent alternative for connoisseurs looking for finesse. Discreet vegetal notes and a slight hint of iodine complete its aromatic profile, while retaining the noble, refined characteristics that are the hallmark of caviar.
