What is the original caviar tin?

The caviar origin box is a term frequently used in the world of caviar, but one that many consumers are unfamiliar with. History and concept of the original box

The original tin, also known as the mother tin, is the first tin in which caviar is packaged after the eggs have been extracted from the sturgeon. Historically, the caviar was packed directly into these tins, traditionally made of metal, and then shipped around the world. This process guaranteed maximum freshness, as the caviar was packaged as close as possible to the time of production.

The ‘BO’ is used for storing and maturing caviar. It generally contains several kilos of caviar (between 1.8 kg and 3 kg), unlike the small tins marketed for retail sale. It is also in this tin that the caviar will age for several weeks to develop its complex flavour before being repackaged in smaller tins.

Special features of the original box

One of the special features of the original tin is that it is often hermetically vacuum-sealed to preserve freshness and prevent oxidation of the eggs. This packaging is designed to maintain the highest product quality, while complying with strict caviar preservation standards. It also guarantees the traceability of the caviar. Each original tin has a unique number and information on the producer, the type of caviar (beluga, osciètre, baeri, etc.) and the production date. This information is crucial to ensure that the product meets quality standards and to prevent counterfeiting.

Differences between the original box and the daughter box

The daughter tin refers to the small tins in which the caviar is repackaged before being sold to consumers. These tins, often of 30g, 50g or 100g, come directly from the original tin. Repackaging in daughter tins is a delicate stage, as it must be carried out under optimum conditions to preserve the freshness and texture of the eggs. While the original carton is used for maturing and long-term storage, the daughter carton is primarily intended for sale and immediate consumption.

Possibility of leakage during delivery

Small leaks of yellowish liquid may occur when caviar is delivered. Unlike daughter tins, which are airtight and vacuum-packed, ‘Origin tins’ are filled to volume and simply pressurised. The caviar continues to mature in them, resulting in a loss of up to 5% of its weight. This is why Maxim's de Paris sends these tins in a pouch. Before serving, open the pouch, clean the tin and remove the elastic band. Open it carefully, turning if necessary.
