Sturgeon: Acipenser Stellatus
Now extinct in the wild, it is one of the rarest farmed caviars. At the time, Sevruga caviar accounted for 60% of wild production in the Caspian Sea.
Tasting advice
To serve the caviar, we recommend removing the tin from the fridge 5 minutes before serving. Place it on ice to keep the caviar fresh for eating. Use a mother-of-pearl spoon to preserve the grains and prevent oxidation.
